1 packet Grain Trust brown rice
1/2 tbsp virgin olive oil
1 leek, rinsed thoroughly and thinly sliced
3 cloves garlic
1 bunch asparagus, ends broken off and chopped into 1 inch pieces
1 cup frozen peas
Red Pepper Hemp-Basil Pesto
1 small clove garlic, minced
3/4 cup basil leaves
1/4 cup hulled hemp seeds
1/4 cup roasted red peppers (fresh or from a jar)
1 tbsp lemon juice
2 tbsp olive oil
1 tbsp water
1/4 tsp seal salt
1Add the olive oil to a large pan over medium heat. Add the sliced leek and garlic and sauce for about 3-4 minutes, until soft and translucent. Add salt and pepper.
2Add the asparagus and sauce around 8 minutes, until tender. Stir in the peas and heat for a few minutes, until the peas are cooked through.
3Meanwhile cook the rice according to the instructions. Add salt and pepper to taste.
4For the hemp-basil pesto, place all ingredients in a high speed blender and blend until smooth, scraping the bowl half way through.
5When the rice is cooked, add the pest to the pan with the asparagus and pea mixture. stirring to combine and gently warmthe pesto.
6Divide the Grain Trust brown rice packet in equally between two plate. Spoon the asparagus, pea and pesto mixture on top. Enjoy!
