Brown Rice with Mushrooms, Squash, and Basil

Ingredients

1 pouch of Grain Trust Organic Brown Rice

3 small yellow summer squash, halved and sliced

1/2 cup cherry tomatoes

1 cup shiitake mushrooms, thinly sliced

1/2 cup fresh basil, julienned

1 tbsp olive oil

1/2 tbsp red wine vinegar

2 garlic cloves, minced

Directions

1Preheat oven to 425°F. Line a large baking tray with parchment paper.

2In a bowl, combine the summer squash, tomatoes, and mushrooms. Toss with olive oil, salt, and pepper. Spread the vegetables on the baking trays and roast for 15-20 minutes, until lightly browned.

3Meanwhile cook the Grain Trust Brown Rice according to the packet instructions. Set aside and keep warm.

4Add the warmed vegetables, brown rice, olive oil, and garlic. Toss to combine. Finish with the basil. Serve warm or cold.
