Brown rice with toasted almonds, cranberries and green onion

This dish has a lovely combination of textures and the sweetness of the
cranberries cuts the sharpness of green onions nicely.

Ingredients

1 bag Trader Joe’s Organic Brown Rice

1/2 cup almonds, chopped

1/2 cup Cranberries

3 Green onions

Lemon juice of one lemon

3 tbsp Olive oil

Salt and pepper to taste

Directions

1Toast the almonds in a dry pan (no oil) for about 7 minutes on low heat,tossing occasionally being sure not to burn them. Remove outer layers of green onions and chop into small coins. Microwave the brown rice according to package directions. Add all ingredients in a bowl and add salt and pepper to taste.
