Cashew Butter Brown Rice Porridge with Orange, Walnut and Mint

Ingredients

1 pouch of Grain Trust Organic Brown Rice

1 tbsp cashew butter

1 cup coconut milk

1 juice and zest of orange

1 tbsp mint leaves, chopped

1 tbsp walnuts, chopped

Directions

1Cook the Grain Trust Organic Brown Rice according to the packet instructions.

2To the cooked brown rice, add the orange juice, zest, and coconut milk and cook over medium heat until the most of the liquid is absorbed, about 15 minutes. Remove from heat and stir in the cashew butter.

3Serve with topped walnuts and mint leaves. Extra coconut milk is optional.
