Jasmine rice with lemon, parsley and cracked pepper

This dish places parsley at the center stage, where the jasmine rice can mellow out an herb that can otherwise pack a punch.

Ingredients

1 bag Trader Joe’s Organic Jasmine Rice

1 1/2 cups Roughly chopped parsley

Juice of one lemon

3 tbsp Olive oil

Salt and pepper to taste

Directions

1Remove leaves of parsley from the stem and chop roughly. Microwave the jasmine rice according to package directions. When rice is cooked, mix together the parsley, lemon juice, olive oil, salt and cracked fresh pepper.
