1Preheat the oven to 400°F and line a large baking sheet with parchment paper.
2Brush the eggplant and zucchini with olive oil and season with salt and pepper. Roast for about 25 minutes, or until the eggplant is thoroughly cooked and the zucchini is fork-tender.
3Meanwhile, cook the Grain Trust Jasmine Rice according to the packet instructions.
4Once the vegetables have roasted, assemble your bowls. Mix the homemade pesto with the Grain Trust Jasmine Rice and place in the bottom of a large bowl. Follow with the red pepper, zucchini, eggplant, chicken, lemon wedges, olives, and 1 Tbsp hummus (per bowl).
