Nourishing Fish Taco Bowl

Ingredients

3-4 tilapia fillets (or similar fish of your choice)

1 tbsp chili powder

1 tbsp cumin

1 tsp cayenne pepper

2 cloves minced garlic

1 can black beans

1 poblano pepper, diced

1/2 red onion, diced

1 red pepper, diced

1 cup corn kernels

4 cups fresh spinach (or greens of your choice)

1 packet Organic Brown Rice

fresh cilantro

avocado

fresh salsa

Dairy-Free Ranch Dressing

1/2 cup unsweetened almond milk

1/4 cup cashews

1 small clove garlic (or 1/2 large)

1/2 tbsp chi seeds

1/2 tbsp chopped fresh chives

1/2 tbsp chopped fresh parsley

1 tsp apple cider vinegar

1/4 tsp sea salt

1/8 freshly ground black pepper

Directions

1In a small bowl, bend the chili powder, cumin, and cayenne. Sprinkle over the fish fillets, coating both sides.

2Heat 1 Tbsp of neutral flavored oil in a large nonstick frying pan. When the oil is hot, add the garlic and saute for 1-2 minutes. Add the fish to the pan. If you have a large enough lid, place this on top add moisture. Cook for several minutes on both side.

3Meanwhile, cook the Organic Brown Rice according to the instructions.

4Make the dressing. In a blender, combine all the ingredients until very smooth.

5Place your greens in a large bowl. Add the black beans, poblano pepper, red onion, red pepper, corn, and cilantro and avocado (if using). Top with the fish, brown rice, and fresh salsa. Drizzle with creamy ranch dressing.
