Walnut Rosemary Brown Rice with Mushrooms

Ingredients

1 pouch of Grain Trust Organic Brown Rice

2 tbsp olive oil

3/4 red onion, chopped small

2 cloves garlic

1 lb crimini mushrooms, chopped

1/4 cup roasted walnuts, chopped

1 tbsp fresh rosemary, chopped

2 tsp red wine vinegar

1 medium sweet potato, chopped and roasted (option)

salt

pepper

Directions

1Cook the Grain Trust Brown Rice according to the packet instructions. Season with salt.

2In a large skillet, heat the olive oil over medium heat. Add the red onion and cook 2 minutes, stirring constantly. Add the garlic and cook for another 2 minutes, stirring constantly. Add the mushrooms to the pan and add a pinch of salt. Cook, stirring frequently, for 5-8 minutes or until the mushrooms have release their juices and are reduced in size. Add the red wine vinegar and cook until most, if not all, of the liquid is gone. Stir in the walnuts and rosemary.

3Once the mushroom and walnut mixture is ready, add the brown rice. Stir to combine and season with salt and pepper.

4Enjoy alone or with roasted vegetables, such as sweet potato.
