Warming Brown Rice and Butternut Squash with Hemp Parmesan

2 pouches of Grain Trust Brown Rice
1 small butternut squash, cut into 1/4 inch cubes
3 cupscurly kale
1/4 cupsun dried tomatoes
3 cloves garlic, minced
2 tbspolive oil
1/2 cupraw almonds
1/2 cupraw pepitas
1 tbspnutritional yeast
1 tbsphemp seeds
1 tspolive oil
1Make the hemp parmesan. In a food processor, add all the ingredients and blend on medium speed until the mixture resembles coarse sand. Set aside.
2In a large pan, heat the olive oil over medium heat. Add the garlic and sauce for 3-5 minutes. Add the butternut squash and cook for another 8-10 minutes, until the squash is just fork-tender. Add the kale, sun dried tomato, and water and steam for 3-5 minutes until the kale has wilted and the sun dried tomatoes cooked through.
3Meanwhile, cook the Grain Trust Brown Rice according to the packet instructions.
4Serve the brown rice and kale mixture followed by the hemp parmesan.
5*Note: This recipes make extra hemp parmesan. Store in a a sealed container in the fridge for about 5-7 days.
