Brown Rice and Caramelized Fennel Salad

1 packet Grain Trust Brown Rice

1 bulb of fennel, trimmed, cut in half plus core removed

1/2 english cucumber, diced

1/4 cup chopped fresh dill

2 green onions, sliced thin

2 tsp dijon mustard

juice of one lemon

3 tbsp olive oil, plus extra for roasting

salt and pepper


1Preheat the oven to 400°F and line a baking sheet with parchment paper and set aside.

2Cook the Grain Trust Brown Rice according to the instructions and set aside.

3Toss the fennel halves in oil, salt, and pepper. Spread them out on the lined baking sheet and roast for about 15 minutes, or until soft and the fennel wedges are caramelized and golden on the edges.

4In a small bowl combine the dijon, lemon juice, and olive oil and whisk to combine.

5Place the brown rice in a large bowl and fluff with a fork. Add the roasted fennel, cucumber, dill, and green onions. Toss with the dijon lemon dressing and season with salt and pepper. Mix thoroughly to combine.
