1Cook the Grain Trust Organic Brown Rice according to the packet instructions.
2Meanwhile, in a large bowl combine the brown rice, bruschetta sauce, and feta. Stir to combine then add the basil.
3To serve, spread one cup of the arugula on a plate. Add about 1/2 cup of the bruschetta brown rice, followed by the avocado. (If eating as a main, increase the serving of bruschetta rice to 3/4 cup or 1 cup).
4Season with salt and pepper, followed by a drizzle of olive oil and squeeze of lemon juice.
