1 pouch of Grain Trust Organic Jasmine Rice
1 lb boneless, skinless chicken tenders, cut into 1/2 inch pieces
2 tbsp chili powder
2 tsp ground cumin
1/4 cup olive oil
1 juice of a lime
2 garlic cloves, minced
1 red bell pepper, cut into thin strips
1 green bell pepper, cut into thin strips
1 small red onion, thinly sliced
1Cook the Grain Trust rice according to package instructions.
2In a large bowl, combine the olive oil, chili powder, cumin, 1 teaspoon salt and several grinds black pepper. Add the chicken, garlic, peppers, and onion and toss well to coat.
3Heat a large skillet or pot over high heat. Add the chicken mixture and cook for about 10 minutes, stirring often, until the chicken is cooked through.
4Serve on a bed of Grain Trust jasmine rice. Top with guacamole, salsa, sour cream and lime wedges on the side.
