2 pouches of Grain Trust Organic Jasmine Rice
2 tbsp olive oil
1/2 yellow onion, chopped
1 jalpeno peppers, finely chopped
2 cloves garlic, minced
3 tbsp tomato paste
1 14 oz. can diced tomatos
1 cup vegetable broth
2 tsp ground cumin
1 tbsp chili powder
salt & pepper
1In large skillet heat olive oil over medium-high heat.
2Cook the peppers, onion and garlic until tender.
3Add tomato paste and cook for one minute.
4Add broth, canned tomatoes, spices, salt and pepper. Stir well and bring to a simmer, reduce heat to low.
5Cook 2 pouches of Grain Trust Steamed Organic Jasmine rice according to the instructions on the box.
6Put lid on skillet. Simmer for 5 minutes and then add the frozen rice with one cup of vegetable broth. Bring to a boil and simmer for 5 minutes.
7Serve and top with cheese.
