Falafel with Moroccan Spiced Jasmine Rice

Ingredients

Moroccan Spiced Jasmine Rice

1 pouch of Grain Trust Organic Jasmine Rice

3 tbsp olive oil

1 onion, finely chopped

1/2 tsp salt

3 gloves garlic, minced

2 bay leaves

3 tbsp harissa

4 mediool dates, pitted and diced

1 orange, zested and juiced

Falafel

1 can of chickpeas, rinsed and drained

1/2 red onion, chopped small

3 tbsp parsley, roughly chopped

3 tbsp cilantro, roughly chopped

1 cup cumin

1 1/2 tsp red pepper flakes

4 cloves garlic, chopped

1/2 tsp salt

5 tbsp all purpose flour

1 tsp baking powder

3 tbsp safflower oil

Spiced Yogurt Sauce

1 cup greek yogurt

1/2 tsp coriander

1/2 tsp cumin

1/4 tsp chili powder

1/4 tsp ground pepper

1/4 tsp garlic powder

1 tsp fresh lemon juice

Directions

Falafel

1In a food processor, add the chickpeas, onion, parsley, cilantro, cumin, red pepper, garlic, and salt. Process until mixed but not a puree. Stir in the flour and baking powder. With your hands, form 1-inch round balls (about the size of golf balls) and set aside.

2In a medium pan, heat the safflower oil over medium-high heat. When the oil is spitting, add the falafel. Cook for about 3 minutes, turn, and cook for another 3 minutes. Repeat until the falafel are browned on all sides and cooked through. Remove the falafel from heat and place on a plate with paper towel.

Moroccan Spiced Jasmine Rice

1Heat the oil in a large pot over medium heat. Add the onions and sauté until soft and translucent, about 5 minutes.

2Cook one pouch of the Grain Trust Organic Steamed Jasmine Rice according to the directions on the package.

3To the onions, add the garlic, bay leaf, frozen Grain Trust Jasmine rice, dates, orange zest, and orange juice. Cover and simmer for about 3 minutes, until the rice is cooked through. Stir each minute to prevent the rice from sticking.

Spiced Yogurt Sauce

1Mix all the ingredients in a medium bowl. Serve with diced cucumber, red onion, hummus, and fresh parsley. Enjoy!
