Spicy Rice Pilaf

1 pouch of Grain Trust Organic Jasmine Rice

1 tbsp butter

1/2 red onion, chopped small

5 button mushrooms, chopped

3 cloves garlic, minced

2 cup chicken stock

2 tsp red pepper flakes

2 chopped green onion

salt and pepper


1Melt butter in a large pot over medium heat; cook and stir chopped jalapeno, mushrooms, onions and garlic until soft, about 8-10 minutes.

2Stir in the rice and add chicken stock. Cover and boil until liquid is absorbed, about 10 minutes.

3Season with red pepper flakes, salt, black pepper and garnish with chopped green onions.
