1In a medium saucepan, heat the oil over medium heat. Add the garlic and red onion and cook until translucent, about 7 minutes. Add the pulled pork, chill sauce, and spring onions. Continue stirring until the pork is heated through and the chili sauce is distributed evenly. Add the brown rice and stir to combine.
2Meanwhile, in a small pan heat the remaining oil over medium-high heat. Fry the eggs until firm with the yolks runny.
3Cook the Grain Trust Organic Brown Rice according to packet instructions.
4To assemble place your pulled pork brown rice mixture in a bowl. Top with the fried egg and avocado. Season with salt and pepper.
