Brown Rice, Asparagus and Peas with Red Pepper Hemp-Basil Pesto

Ingredients
1 packet Grain Trust brown rice
1 can black beans, drained and rinsed
1 red pepper, finely chopped
2 ripe avocados, halved and pits removed
For the lemon-cumin dressing
1/4 cuplemon juice (about 1 lemon)
2 tbspolive oil
2 cloves garlic, minced
1 tspground cumin
1 1/2 tspmaple syrup
1 tspfresh dill, finely chopped
salt and pepper to taste
Directions
1Prepare the Grain Trust brown rice according to the instructions, seasoning with salt once cooked through. Set aside to cool.
2Meanwhile, make the lemon-cumin dressing. Whisk the lemon juice, olive oil, garlic, ground cumin, maple syrup, dill, salt and pepper in a small bowl.
3Once the rice has cool, in a large bowl toss the brown rice, red pepper, black beans and dressing. Remove the seed from the avocado halves and “stuff” the center with the salad.
