The earthiness of the walnuts and thyme go really well with the subtle sweetness of brown rice here. The addition of cut apples, cranberries or raisins would also work well here.
Ingredients
1 bag Bag of Trader Joe’s Organic Brown Rice
2 tbspFresh thyme
2/3 Cup chopped walnuts
3 tbspOlive oil
1/4 tspSalt
1/2 cupDried cranberries or other fruit optional
Directions
1Remove thyme leaves from stalk. Toasting the walnuts would bring out a stronger nutty flavor, but this dish has plenty of flavor without that. Toss the remaining ingredients in the cooked rice.
