1In a medium large pan, heat 1 Tbsp of olive oil over medium heat. Once the pan is warm, add the chicken and cook the chicken until golden brown and cooked through. Remove from pan and place in a separate bowl. Salt and pepper to taste.
2Using the same pan over medium heat, add 1/2 Tbsp olive oil followed by the eggs. Spread the egg mixture evenly over the pan until it resembles a thin pancake. Cook until the egg is firm and cooked through. Remove from heat and cut the omelet into strips. Set aside.
3Add the remaining olive oil to the pan, following by the onions, peppers and garlic. Cook until the onions are translucent and peppers fork tender. Add the broccoli and cook for 1-3 minutes until the broccoli is al dente.
4Meanwhile, cook the Grain Trust Organic Jasmine Rice according to packet instructions.
5To the vegetable mixture, add the rice and peas and cook, stirring frequently to break up the rice. Lastly, add the omelet strips, chicken cubes and cilantro. Garnish with red chili flakes if desired.
