1Heat the oil in a large pot over medium heat. Add the onions and cooks until translucent, about 5-7 minutes. Add the garlic and ginger and cook for another 2 minutes, stirring constantly. Add the curry paste, turmeric, garam masala, cinnamon, salt, and pepper and stir to combine.
2Add the squash and vegetable broth. Brung to a boil. Reduce to a simmer and cook for 15 minutes until the squash is tender. Remove from heat and blend half the mixture just for a second or two using a blender and then add back into the pot.
3Meanwhile, cook the Grain Trust Organic Brown Rice according to the packet instructions
4Stir in the chickpeas, raisins, lime juice, and spinach. Bring to a gentle simmer. Adjust salt and pepper to taste. Serve with brown rice and cilantro for garnish.
