Chopped Winter Veggies with Brown Rice and Garlic Mustard Aoli

Ingredients
1 pouch of Grain Trust Organic Brown Rice
1 small head of cauliflower, roughly chopped
8 oz.cremini mushrooms, roughly chopped
2 small zucchinis, chopped
1 1/2 cupscorn
1/2 head radicchio, sliced
1/4 cupcilantro, chopped
salt
pepper
Directions
1Preheat oven to 425°F. Line a large baking sheet with parchment paper.
2Toss the cauliflower, mushroom, zucchini, and corn with olive oil. Season with salt and pepper. Roast for 20-25 minutes, until the vegetables are lightly charred and cooked through.
3Meanwhile cook the Grain Trust Brown Rice according to packet instructions. Season with lightly with salt.
4In a small bowl, whisk together the Aioli Garlic Mustard Sauce, lemon juice, and olive oil.
5Remove the vegetables from the oven an place in a large bowl. Add the radicchio, cilantro, and Garlic Mustard Aioli. Stir to combine.
6Serve the chopped winter vegetables with Grain Trust Organic Brown Rice.
