Serves 4
1 pouch of Grain Trust Organic Jasmine Rice
3 tbsp olive oil
1 lb strip steak, thinly sliced
2 cloves garlic
1 medium onion, thinly sliced
8 oz. button mushrooms, sliced
1 tbsp paprika
3 tbsp tomato paste
3 cup beef stock
1 tbsp fresh parsley
1In a large pot, heat the oil over medium-high heat. Add the beef strips and cook for 2 minutes on each side. Remove and set aside.
2Return the pot to heat and add the garlic, onion, mushrooms, paprika, and tomato paste. Cook for 2-4 minutes, until the spices are fragrant.
3Add the beef stock and stir to combine. Bring to a boil, then simmer for 15 minutes.
4Meanwhile, cook the Grain Trust Organic Jasmine Rice according to the packet instructions.
5Once the meat is tender and the mushrooms cooked, add the sour cream. Stir to combine.
6Serve over a bed of Jasmine rice and a sprinkle of parsley.
