Easy Red Lentil and Cauliflower Curry

1 pouch of Grain Trust Organic Brown Rice

1 medium cauliflower, chopped

1 medium sweet potato, chopped

1/2 red onion, chopped

3 garlic cloves

1 1-inch piece of fresh ginger

2 tsp garam masala

1 tsp ground coriander

1 tsp tumeric

1 tsp paprika

1 can reduced fat coconut milk

1/2 cup red lentils

1 tbsp tomato paste

3 cups baby spinach




1In a large pot over medium heat, add the onion and garlic. Cook until the onions are translucent, about 7-8 minutes. Add the ginger, garam masala, turmeric, coriander, and paprika. Cook for about 1-2 minutes, or until the spices become aromatic. Stir in the coconut milk, water, red lentils, and tomato paste. Bring to a boil, reduce to a simmer, cover, and cook another 15-20 minutes or until the vegetables are fork tender and the lentils cooked through.

2Meanwhile, cook the Grain Trust Organic Brown Rice according to the packet instructions.

3Once the lentils are cooked through and the vegetables are tender, stir in the baby spinach until the leaves have just wilted. Serve on a bed of brown rice or on the side.
