Japanese Fried Brown Rice Omelet with Chicken

Ingredients

1 pouch of Grain Trust Organic Brown Rice

5 tbsp vegetable oil

1/2 medium white onion, finely chopped

1 large carrot, diced

1 cup boneless skinless chicken breast, cut into 1/2 inch cubes

1/2 cup ketchup, thinned with one tablespoon of water

2 green onions, chopped

4 large eggs, beaten

salt and pepper

roughly chopped parsley, for garnish

Directions

1Cook pouch of Grain Trust Organic Steamed Brown Rice according to the instructions on the pouch.

2 Heat 1 tablespoon of the vegetable oil in a non-stick skillet on high heat. Add the frozen Grain Trust rice to the pan. Stir until and cook until the rice is lightly toasted, about 4 minutes. Transfer to a separate bowl.

3Add 2 more tablespoons of oil to the skillet. Return to high heat and add the onions and carrot. Cook, stirring frequently, about 3 minutes. Add chicken and cook, stirring until the chicken is cooked through and starting to lightly brown, about 3-4 minutes.

4Return rice to the pan with the chicken and stir. Add the ketchup water mixture and cook for 1 minute. Add the chopped scallions. Season with salt and pepper. Scrape the rice mixture into a small bowl and pack it in tightly. Place a serving plate on top of the bowl of rice, flip, then remove the bowl.

5Add remaining 1 tablespoon of oil to the pan over medium low heat. Add the eggs and stir rapidly with a spatula (chopsticks work well) while shaking pan. Using a spatula, gently spread the omelet in an even layer around skillet and scrape down the sides. Once the eggs are just cooked through and lightly golden, remove the pan from the heat.

6Slide the omelet on top of rice mound. Lightly garnish with some ketchup and wasabi mayonnaise (optional). Lastly, sprinkle with chopped parsley. Serve immediately and enjoy!
