Protein Packed Edamame Brown Rice Salad

Ingredients

1 pouch of Grain Trust Organic Brown Rice

1 cup edamame, shelled

1 red pepper, sliced

1 medium carrots, julienned

2 green onions, thinly sliced

1 tbsp olive oil

1/2 tsp sesame seeds

Directions

1Cook the Grain Trust Brown Rice according to the packet instructions. Set aside to cool.

2In a large bowl, combine the edamame, red pepper, carrot, green onion, garlic, and olive oil. Add the cooled brown rice and stir to combine. Finish with the black and/or white sesame seeds. Enjoy!
