Sesame Brown Rice Tofu Bowl with Smokey Paprika Tahini Dressing

Ingredients
1 pouch of Grain Trust Organic Brown Rice
16 oz.extra firm tofu, pressed and cut into 1/2 inch cubes
1 bunch asparagus, ends trimmed
1 1/2 tspsesame oil
1 1/2 tsplow sodium soy sauce
1 tspneutral flavored oil
2 tspgarlic powder
1 tspsalt
1/4 tspfreshly ground black pepper
Smokey Paprika Tahini Dressing
1/2 cuptahini
1/3 cupwater
2 tbspfresh lemon juice
1/2 tspsmoked paprika
1 tspmaple syrup
1/4 tspsalt
Directions
1Make the dressing (can be made a day ahead): In a food processor or stand-up immersion blender, combine all the ingredients until smooth. Add more water for a thinner dressing, more maple syrup for a sweeter dressing.
2Preheat oven to 350F. Line a baking tray with parchment paper. Scatter the asparagus on the tray. Coat with olive oil, salt and pepper. Roast for 20 minutes.
3In a large bowl, combine the tofu, garlic powder, salt and pepper. Toss to evenly coat.
4Heat the oil in a large pan over medium-high heat. Once the oil is hot, add the tofu. Cook on one side for 5 minutes, or until golden brown. Carefully flip the tofu cubes and cook for another 5 minutes. Set aside.
5While the tofu is cooking, cook the Grain Trust Brown Rice according to the packet instructions. Once cooked, stir in the soy sauce and sesame oil until combined.
6To assemble, place the brown rice in a bowl, following by the asparagus and tofu. Drizzle the smokey tahini dressing.
