Spiced Holiday Rice with Cranberries and Kale

Ingredients

2 pouch of Grain Trust Organic Jasmine Rice

1 tbsp unsalted butter

1/2 onion, chopped

2 cloves garlic, minced

1/2 cup pecans, roughly chopped

2 cups tuscan kale, roughly chopped

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp salt

1/2 cup dried cranberries

1 pear, chopped (anjou or bartlett)

1/4 cup parsley, chopped

Directions

1Heat the butter in a large pot over medium-high heat. Add the onion and garlic. Cook until translucent, about 3-5 minutes.

2Meanwhile, cook the Grain Trust Jasmine Rice according to the packet instructions. Set aside.

3To the onion mixture, add the pecans and kale. Stir to combine and cook until the kale has just wilted and the pecans are fragrant, about 2-3 minutes. Add the cinnamon, nutmeg, salt, and Grain Trust jasmine rice and stir to combine. Stir in the cranberries, pear, and parsley.
