Spicy Fried Rice with Blistered Green Beans

1 pouch of Grain Trust Organic Jasmine Rice

2 tbsp olive oil

1/2 lb green beans, cut into 1/2 inch pieces

2 scallions, thinly sliced

2 serrano chiles, thinly sliced

2 garlic cloves, minced

2 tsp soy sauce

1 large egg

1 cup roughly chopped basil leaves

1 lime cut into wedges

1 small cucumber, thinly sliced


1Cook Grain Trust Organic Jasmine Rice according to instructions.

2Heat 1/2 tbsp. olive oil in a large wok /pot over high heat until lightly smoking. Add all of the cooked rice and fry until rice is slightly brown and toasted, about 4 minutes.

3Transfer rice to a separate bowl. Add 1/2 tbsp. oil to the empty wok/pot and heat over high heat again until lightly smoking. Add green beans and cook, and stir occasionally, until they are blistered and charred. Add the scallions, garlic, and chilies and cook, stirring constantly, until aromatic (about 1 minute)

4Return the rice to wok/pot. Add soy sauce and fish sauce and stir to combine.

5Push rice to the side of wok and add remaining 1/2 tbsp. olive oil. Break egg into oil and scramble. Mix the scrambled egg and rice together.

6Lastly stir in the basil leaves. Season to taste with salt and pepper and serve immediately with sliced cucumber, lime and extra fish sauce and sliced chilies if desired.
