Sweet and Savory Edamame Brown Rice Bowl with Miso Dressing

Ingredients
1 pouch of Grain Trust Organic Brown Rice
3 cupsbaby spinach
1 medium sweet potato, 1/2 in slices
2 medium carrots, julienned
1 cupedamame
1/2 lbsbrussel sprouts, trimmed and halved
2 green onions, chopped
2 tbsphulled hemp seeds
salt
pepper
Directions
1Preheat the oven to 425°F and line a large baking sheet with parchment paper.
2Toss the brussels sprouts and sweet potato with olive oil and season with salt and pepper. Roast the vegetables until fork tender and lightly browned
3Meanwhile, cook the Grain Trust Organic Brown Rice according to the instructions.
4In a small blender or food processor, combine all the ingredients for the miso dressing. Blend until smooth.
5When the vegetables are cooked, divide the spinach between two bowls. Add the sweet potato, carrots, edamame, and brussels sprouts. Sprinkle with the green onions, hemp seeds, and miso dressing.
