Warming Turmeric Rice with Ginger

Ingredients

1 Packet Grain Trust Jasmine Rice

1 tbsp coconut oil

2 cloves garlic, minced

1 tsp ginger, minced

1 tsp turmeric

1 tbsp lemon juice

1 tsp salt

1/4 cup raisins

1/4 loosely cut cilantro

Directions

1Place the Grain Trust Jasmine Rice packet, coconut oil, garlic, ginger, turmeric, lemon juice, salt, plus 1 Tbsp water in a medium pot with the lid on.

2Turn the stove to medium heat and leave for 2 minutes. After the rice has begin to thaw, stir the rice mixture to incorporate and spices and melt the coconut oil. Replace the lid and cook for another 5-7 minutes, stirring frequently.

3Once the rice is cooked add the raisins and cilantro, gently stirring to combine
