Wild Salmon with Mango Salsa and Jasmine Rice

1 pouch of Grain Trust Organic Jasmine Rice

1 lb wild salmon fillet

Mango Salsa

3 ripe mangoes, cut into 1/4 inch cubes

1 red onion, grated

1 1/2 tbsp fresh lime juice

1 medium red pepper, finely chopped

1 cup cilantro, chopped

1 garlic clove, minced

1/2 jalepeno, minced

1/4 tsp salt

1/4 tsp pepper


1In a medium bowl, add all ingredients and gently stir to combine. Adjust lime juice, salt, pepper to taste.

2In a nonstick pan, add a tablespoon of olive oil. Heat on medium-high until the oil starts smoking. Add the salmon skin side down and sear for 5 minutes. Flip, season with salt and pepper, and cook for another 4 minutes. The salmon should be just cooked through.

3Cook the Grain Trust Organic Jasmine Rice according to the packet instructions. Set aside.

4Combine rice and fish in any bowl and cover with the salsa. Enjoy!
