1In a large bowl, toss the cauliflower, carrots, olive oil, coconut, garlic, cumin, turmeric, and salt.
2In a large wok over medium heat, add the cauliflower mixture followed by 2 Tbsp of water. Cover and let simmer for about 5-7 minutes, until the cauliflower is fork-tender. (You may need to add water as you go along, depending on how long it takes the cauliflower to cook through.) Uncover, add the chickpeas and stir to combine. Add the cilantro and remove from the heat.
3Meanwhile, cook the Grain Trust Jasmine Rice according to the packet instructions.
4Serve the rice and cauliflower stir fry followed by any additional cilantro.
