1In a large bowl, combine all the species to make the fajita seasoning. To the bowl, add the onion, peppers, chicken tenders and olive oil and mix until the chicken is coated.
2Heat a large pan over medium heat. Add the chicken mixture and stir constantly for about 5 minutes. Add the lemon juice and cover, cooking 15-18 minutes, stirring occasionally.
3Meanwhile, cook the Grain Trust Jasmine Rice according to the packet instructions.
4Divide the jasmine rice between four bowls, followed by the chicken fajita mixture. Top with tomatoes, cilantro, cheddar cheese, sliced avocado, and lime.
