1Cook the Grain Trust Jasmine Rice according to the packet instructions.
2While the rice is cooking heat 1 tablespoon olive oil in a large pan or wok over high heat. Add the onion, carrot, green onion, garlic, ginger and cook until ingredients are softened and fragrant.
3Add the cooked Jasmine rice and mix to combine. Add the soy sauce and sesame oil and mix well until the rice and vegetables are evenly coated. Season to taste with salt, pepper and chili flakes
4Push the rice to the side of the pan. Add the remaining 1 tablespoon of olive oil over medium heat. Add in the eggs and scramble until almost cooked through. Now mix the egg and the rice together.
5Add frozen peas and continue to stir until peas are thawed. Serve and top with cilantro leaves.
